Wood-fired — the real article.
A genuine refractory wood-fired oven gets to 450°C floor temperature and cooks a Neapolitan-style pizza in 60–90 seconds. The flavour is unmatched. The trade-off: 45–60 minutes from cold to cook-ready, smoke that has to go somewhere (AS/NZS 2918 flue install through the alfresco roof), and an honest discussion with your neighbours about which way the smoke drifts in your prevailing breeze. Gas — the practical pick.
Gas-only pizza ovens (Alfa Forni Allegro, Beefeater Bugg) and gas-converted kit ovens hit cook temp in 15–20 minutes, no smoke, no neighbour drama, tap straight into the alfresco gas manifold. The pizza isn’t quite the same as wood-fired Neapolitan, but it’s excellent and easier to use spontaneously. We install these on roughly 40% of jobs — especially tighter Hampton Park / Narre Warren blocks.
What the build includes.
- Oven kit supply (Italian or Australian, your choice)
- Footing and structural base (engineer-spec for the oven weight, 250–800kg)
- Firebrick base and refractory mortar dome assembly
- Insulation blanket and finishing dome cladding
- Masonry surround — rendered brick, stone clad or bagged brick
- Twin-wall insulated flue with proper roof penetration (wood-fired)
- Gas spur from manifold + isolation cock (gas)
- Pre-cast or tiled landing for peels and tools
- Mandatory 7–14 day dry-out fire schedule before first proper use
- VBA-registered builder, AS 5601 gas certificate where applicable
Honest tradeoffs.
- You will use a wood-fired oven less than you think. The 45-minute warm-up rules out Tuesday-night pizza. Plan for once a week at most, mostly on weekends.
- Cheap eBay ovens crack. Sub-$1,500 kit ovens use thin refractory ceramic that cracks within 2–3 Cranbourne winters. We won’t supply them.
- The flue is the most common failure point. Single-wall stovepipe DIY flues fail building inspection and are a fire risk. Twin-wall insulated only.
- The dry-out fire schedule is non-negotiable. Skip it and the refractory cracks on the first proper hot fire. We hand the schedule over with the build.
