Looking after a Cranbourne outdoor kitchen - the honest list.

Nobody wants a maintenance page. But an outdoor kitchen that gets about three hours of attention a year lasts twenty-plus years, and one that gets none needs its cabinetry replaced at year eight. Three hours. Here is exactly what to do, when, and what happens to your money if you do not.

The calendar

The whole schedule, on one page.

Every couple of months (ten minutes).

  • Wipe the stainless down with warm water and a soft cloth, in the direction of the grain.
  • Look under the sink and at the back of the cabinet run for damp. That is where water hides.
  • Check the BBQ drip tray. An overflowing one is a grease fire waiting for a hot February day.

Twice a year - autumn and spring (one hour).

  • Clear the alfresco gutter. The single most valuable ten minutes on this page.
  • Check roof fixings and flashings - anything backed out, any crushed washer, any lifted flashing where the roof meets the house.
  • Test the benchtop sealer with the water-bead test below.
  • Check cabinet doors for stiffness. Sticking doors are an early warning, not a quirk.
  • Look at the hinges and fasteners for tea-staining. Streaks from fasteners are cheap to fix now.

Annually (an hour, plus a tradesperson if you have gas or a wood oven).

  • Sweep the wood-fired pizza oven flue before the first proper fire of the season.
  • Service the BBQ - burners, ignition, grease trap, hose and regulator if it is bottled.
  • Reseal the concrete benchtop if the water test says so. Usually every second year.
  • Oil the merbau if you have a hardwood deck under the alfresco. Annually, without fail, or it greys and cups.
  • Have any gas concern looked at by a licensed gasfitter. AS 5601 work is licensed work in Victoria, and there is no owner exemption.

The four jobs that actually matter.

Resealing the benchtop - the water-bead test.

Flick a bit of water onto the concrete. If it beads, you are fine. If it soaks in and darkens the surface within a few seconds, the sealer has gone and the next glass of red is permanent. Outdoor polished concrete needs a penetrating, UV-rated sealer - not the topical product used on an indoor benchtop - and Cranbourne's summer sun eats it faster than people expect. Two-yearly is the realistic interval here. A reseal is a couple of hundred dollars. A stained benchtop you cannot rescue is $5,900 to replace, and re-sealing over a stain just locks it in forever.

Cleaning stainless without wrecking it.

Stainless steel is stainless because of a microscopically thin passive layer on the surface. Steel wool, wire brushes, chlorine bleach and abrasive cream cleansers all scratch through it, and once it is breached the steel corrodes outward from the scratch. Warm water, soft cloth, with the grain. Purpose-made stainless cleaner if it needs more. That is it. Combine that with 304 grade rather than 430 - the right spec for Cranbourne's low to medium corrosivity category under AS 4312, sitting 15km inland of Western Port - and your cabinetry outlives your appliances.

The pizza oven flue.

A wood-fired oven builds creosote in its flue exactly like a wood heater does, and creosote is what starts flue fires. The Cranbourne usage pattern makes this worse than average: hard use from October to March, then nothing all winter, then a big fire in spring up a flue full of last summer's residue. Sweep it annually, before the first proper burn. While the sweep is happening, check the flashing where the flue passes through the alfresco roof, because that penetration is a classic leak point. The gutter - the one everybody forgets.

An alfresco gutter is small, low and out of mind, and it serves a roof that can be 40 square metres of Colorbond. In a genuine Cranbourne downpour a blocked one overflows down the back wall and dumps water right beside your footings. On Class M reactive clay under AS 2870, concentrated water next to footings is precisely how you start the differential movement that cracks benchtops and racks door frames. Ten minutes, twice a year, and once more if you have gums over the roof.

Worked example

Three hours a year against $11,000 - the actual sum.

A 3.6 metre kitchen run under a 25 square metre Colorbond alfresco in Cranbourne East, over ten years. What upkeep genuinely costs:

  • Benchtop resealing, five times over ten years at about $240 each (or roughly $60 in product if you do it yourself): $1,200
  • Annual BBQ service, ten times at about $180: $1,800
  • Pizza oven flue sweep, ten times at about $150: $1,500
  • Decking oil if there is merbau under the roof, ten times at about $140: $1,400
  • Your own time, gutters and stainless and checks: about three hours a year
  • Ten-year total: roughly $5,900, and a kitchen still going at year 25.

Now the version with no maintenance. Cabinet run delaminated by year eight from water nobody chased: $11,400 to rebuild in marine ply with 304 stainless. Benchtop permanently stained and replaced: $5,900. BBQ dead at year seven instead of fifteen: $6,800 early. That is over $24,000 of avoidable spend inside a decade, and it buys you a kitchen that is worse than the one you already had. How often should I reseal an outdoor concrete benchtop in Cranbourne?

Roughly every two years, and test it rather than guessing. Flick water onto the surface: if it beads, the sealer is working; if it darkens the concrete within a few seconds, the sealer is gone and you are one dinner party away from a permanent oil stain. Outdoor concrete needs a penetrating, UV-rated sealer, not the topical product used on indoor benchtops. Our summer sun degrades sealers faster than most people expect, and a reseal is a couple of hundred dollars against a benchtop you cannot un-stain.

What is the right way to clean outdoor stainless steel?

Warm water, a soft cloth, and wipe in the direction of the grain. If it needs more, a purpose-made stainless cleaner. Never use steel wool, a wire brush, chlorine-based bleach or an abrasive cream cleanser - they scratch the passive layer that makes stainless stainless, and once that layer is compromised the steel corrodes from the scratch outward. Doing this two or three times a year is genuinely most of what keeps a Cranbourne outdoor kitchen looking new.

Do I need to sweep the flue on a wood-fired pizza oven?

Get it swept, and check the flashing where the flue passes through the alfresco roof while you are at it.

Should I cover my BBQ over a Cranbourne winter?

Cover it, but let it breathe. A fitted cover on a cold, wet BBQ traps moisture against the steel and does more harm than no cover at all - we have pulled covers off units in August that were wetter underneath than the ones left bare. Let the BBQ dry completely before covering, use a breathable cover rather than a sealed plastic one, and pull it off on a dry day now and then. Better still, build it under a roof, which is the actual answer.
